2 egg whites
½ tsp lemon juice

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Rinse the currants, peel and drain well.

For the dough, beat the softened butter with the sugar and vanilla sugar until smooth, then add the egg. Mix the flour with the baking powder and 1 pinch of salt and fold in. Grease the springform pan and spread the dough over the base about 1 cm (approximately 1/3 inch) thick. Bake in the preheated oven for 20 minutes until golden brown.

For the meringue, beat the egg whites with the lemon juice until stiff, gradually adding the sugar. Fold in the currants just before the meringue is stiffened. Spread the meringue over the pre-baked crust and bake again for 25-30 minutes until lightly browned on top. Let the cake cool for 10 minutes, then remove from the mold and let cool completely on a wire rack. Serve in pieces.
