1 tablespoon Dijon mustard
2 tablespoons Orange liqueur
1 teaspoon cornstarch

Preparation steps

Pour the lemon juice over the raisins. Peel the quince and cut into quarters. Cook the quince quarters in 400 ml (approximately 1 2/3 cup) of red wine with the sugar 25 minutes. Remove and seed the fruit.

Divide the chicken into 8 pieces each. Rinse the meat, pat dry and rub with salt and pepper. Heat the oil and saute the chicken pieces in it on all sides.

Peel the onions and garlic, chop and add with the thyme and bay leaves to the chicken.

Crush the coriander seeds in a mortar. Rinse the citrus fruit, wipe dry and cut the peel thinly in wide strips. Cut the quinces into small pieces. Add the orange and lemon peel and quince to the chicken and cook everything about 15 minutes.

Pour in the remaining red wine and cook the chicken 30 more minutes, stirring often. Remove the chicken pieces.

Add water to the pan as needed for gravy. Stir in the almonds, quince jelly, mustard and orange liqueur. Mix the cornstarch with the cream, pour in the stock and bring to the boil again. Add the soaked raisins with the juice. Season the sauce with salt and pepper and heat the chicken pieces in the sauce. Finally sprinkle some cilantro leaves over the chicken and serve.
