Preparation steps

Dissolve the yeast in 200 ml of lukewarm water. Combine the flour and 1/2 teaspoon of salt in a large bowl. Add the dissolved yeast and 4 tablespoons of olive oil to the flour and knead with the dough hook attachment of an electric mixer until a smooth dough is formed. Cover and let rise in a warm place for 45 minutes, until doubled in size.

Preheat the oven to 220°C (approximately 425°F). Line a baking sheet with parchment paper.

Peel the onion and slice thinly. Mix the thyme with the remaining olive oil and season with salt and pepper.

Transfer the dough to a floured surface and knead a few times. Roll the dough out to about 1.5 cm (approximately 1/2 inch) thick and place onto the prepared baking sheet. Press with fingers to make several indentations over the dough, then top with the sliced onions and drizzle with the thyme olive oil. Bake for 25-30 minutes until golden brown.
