- 500 grams red Currants
- 250 grams Sour cherry
- 250 grams Raspberries
- 1 Cinnamon stick
- 4 Tbsps sugar
- 30 grams cornstarch
- 125 milliliters Cabbage
- 250 grams cooled Whipped cream
- Strawberries (for garnish)
Preparation

Rinse currants and remove panicles. Rinse cherries and remove pits. Rinse raspberries.

Mix fruit with 500 ml (approximately 2 cups) water and cinnamon stick in a saucepan. Heat and simmer for about 5 minutes. Remove cherries and cinnamon stick with a slotted spoon. Press berries through a sieve, add cinnamon stick again and 2 tabespoons sugar, stir and bring to a boil.

Mix cornstarch with cherry juice. Pour into berries and let thicken while stirring. Add remaining sugar, stir and remove cinnamon stick. Mix cherries back in and cool. Scoop red fruit jelly into glass serving bowls. Whip heavy cream, place in a piping bag and top jelly with whipped cream. Garnish with strawberries and serve.
