Ingredients

For the dough
200 grams Pastry flour
200 grams butter
100 grams powdered sugar
100 grams ground almonds
1 egg
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
1 teaspoon grated Lemon peel
1 tablespoon lemon juice
For the filling and to decorate
1 Tort Wafer (round)
400 grams Red currant jam
1 egg yolk

Preparation steps

1.

For the dough, mix the flour with butter and almonds. Add the remiaining ingredients to the flour mixture and knead into a smooth pastry dough. Wrap the dough in plastic wrap and chill for 1 hour in the refrigerator.

Roll out two-third of the dough and line into a springform pan to form the crust. Spread the tort wafer over the crust and abundantly sprinkle with redcurrant jam up to 1 cm (approximately ½ inch) from the edge.

Roll out two-third of the remaining dough and cut into 1 cm (approximately ½ inch) wide strips. Roll the remaining dough and press over the edges. Place the dough strips all over in the pattern of grid.

Whisk the egg yolk with a splash of water, and brush the dough strips with it. Bake in a preheated oven at 175°C (fan: 155°C, gas mark 2) (approximately 350°F) for 50 minutes. Let cool before serving.
