Red Currant Jam Cookies
Quickly process the flour with sugar, vanilla sugar, egg and cold butter and knead to a smmoth pastry dough. Shape the dough into a ball, wrap in plastic wrap and chill for 1 hour in the refrigerator.
Roll out the dough thinly on a floured surface and cut out round cookies using cookie cutters. Cut out small circles in the middle of half of the cookies.
Line a baking sheet with parchment paper and place all the cookies on it. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for 12 minutes.
Carefully remove the baked cookies from the baking sheet. Brush each cookie without a hole with red currant jam and put together with a cookie with a hole. Allow to cool and dust with powdered sugar.
