1 kilogram Currants
500 grams jam sugar (2: 1)
3 Tbsps Crème de cassis (cordial)
1 Lime (Juiced and zested)

Preparation steps

Rinse and clean berries, pat dry. Crush half of berries with a fork. Mix with cassis, jam sugar, lime zest and juice and combine with whole berries. Let rest for about 30 minutes. Bring to a boil, stirring constantly, and simmer for about 6-8 minutes, remove from heat.

Pour jam into prepared preserving jars and seal well. Turn upside down and let cool for about 5 minutes. Return jars to normal position and cool jam completely. Serve as needed.
