14 ozs fish fillets (whitefish or tuna)
4 lemons
1 Orange
Sea salt

1 stick Celery (or cucumber)
1 red chili pepper
2 scallions
1 clove garlic cloves
2 sprigs cilantro
½ red pepper
Leeks (blanched strips, to garnish)
Chives (to garnish)

Preparation steps

Wash the tomatoes and pepper. Trim and core the pepper. Deseed the tomatoes, remove the hard cores and finely dice both the red pepper and tomatoes. Trim and finely dice the celery and spring onions. Wash the chilli, peel the garlic and chop both very finely. Mix all the prepared ingredients, season with salt and pepper, cover and leave to stand for 2 hours. Wash the coriander, shake dry and chop. Mix with the vegetables before serving.

Wash and dry the fish fillet and cut into 3 cm pieces. Tie a chive or a strip of leek around each piece. Sprinkle the fish with salt and leave to stand for 10 minutes. Meanwhile squeeze the lemons and the orange. Pour the juice over the fish and marinate for about 30 minutes. To serve, drain briefly and arrange on plates. Garnish with a few diced vegetables and hand the rest separately.
