Preparation steps

For the dough, mix the flour, sugar, salt, and lemon zest. Cut the butter into small pieces and whisk the egg. Make a well in the center of the flour mixture and add the eggs and the butter. Combine into a smooth dough, shape into a disc, cover and refrigerate for 30 minutes.

Preheat the oven to 180°C (approximately 350°F). Grease the tart pan with butter.

Roll out the dough on a lightly floured surface until just larger than the tart pan. Press the dough gently into the tart pan. Prick the bottom of the dough with a fork several times. Bake in the preheated oven for 20 to 25 minutes. Remove and let cool. 

Whip the cream with the powdered sugar until stiff. Spread the whipped cream evenly on the crust.

Rinse the raspberries and decoratively place them on the whipped cream. Serve immediately.
