Preparation steps

Boil the sugar, lemon juice and raspberry syrup briefly. Rinse the raspberries, reserve a few for decoration and put the rest into the sugar syrup. Bring to a boil again, remove from heat, puree, strain through a sieve and cool. Beat the egg whites until stiff and then gently fold them into the cooled raspberry mixture.

Pour the mixture into a shallow metal pan and freeze for 2 hours, stirring occasionally to avoid the formation of ice crystals. Scoop the sorbet into bowls and garnish with the remaining raspberries.
