- 300 grams Frozen raspberry
- 3 eggs
- 50 grams sugar
- 125 grams Pastry flour
- 1 pinch salt
- 1 pkg Vanilla sugar
- 200 milliliters milk
- 3 Tbsps clarified butter
- mint (for garnishing)
Preparation steps

Thaw raspberries.

Separate eggs. Beat egg whites, sprinkle with sugar and vanilla sugar and beat until shiny and stiff.

Whisk egg yolks with milk, salt and flour until smooth. Fold in egg whites and raspberries.
4.
Heat butter in a pan. Cook pancakes, few at a time, until golden brown on both sides, sprinkling with sugar on each side while cooking.
5.
Garnish with mint leaves and serve.
