Preparation steps

Preheat the oven to 120°C (approximately 250°F) convection. Line a baking sheet with parchment paper.

Place the almonds in blender and finely grind. In a bowl, beat the egg whites with the lemon juice until stiff. Gradually add the powdered sugar and beat until stiff, shiny peaks form. Gently fold in the almonds and color with a few drops of the food coloring until the mixture is pink. Spoon into a piping bag fitted with a large round tip. Pipe 6-8 cm (approximately 2 1/2-3-inch) diameter meringues onto the baking sheet, spacing them 1 inch apart and bake until crispy on the outside and soft on the inside, about 15 minutes. Lift the cookies from the baking sheet and cool on a wire rack.

Before serving, beat the cream with the powdered sugar until stiff and stir in the jam. Spoon into a piping bag with a serrated nozzle and pipe onto the flat side of the macarons. Set the raspberries into the cream and dust with powdered sugar.
