Whether it's rogues, Linz biscuits or Linz eyes, what they all have in common is the short pastry with almonds and the fruity filling. Almonds are rich in monounsaturated fatty acids, which can lower the "bad" LDL cholesterol in the body. The nuts are also an excellent source of folic acid, vitamin E and B vitamins. Good to know: Almonds provide a lot of protein, but also iron!

Label study is worthwhile: common jams contain between 50 and 60 grams of sugar. In fruit spreads, which advertise a high fruit content of 70 to over 75 percent, the sugar content is often around 40 percent, but sometimes also significantly lower. This way the rogues do not become a sugar trap!

For the dough
10 ozs Pastry flour
3 ozs sugar
1 pinch salt
½ tsp Lemon peel
1 egg
7 ozs butter
For preparation

2 Tbsps powdered sugar
6 ozs Raspberry jam

Preparation steps


For the dough, mix the flour with the sugar, salt and lemon zest. Mound up on a work surface, make a well in the center, beat the egg into the well and distribute small pieces of butter around the flour. Combine all ingredients with a pastry knife until crumbly, then knead by hand to make a smooth dough. Shape into a ball, wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180°C / 350°F. Roll out the dough on a floured surface 0.4 cm (approximately 1/8 inch) thick and cut our circles 4 cm/ 1-1/2 inches in diameter with a round cookie cutter.


From the half of the circles, cut out a little star in the center. Place all of the cookies on a baking sheet lined with parchment paper. Bake in the preheated oven for 8-10 minutes until golden. Remove from the oven, pull the baking paper off of the tray and allow the cookies to cool on a wire rack.

Sprinkle the cookies with star cutouts with powdered sugar. Pour the raspberry jam through a fine sieve. Spread the plain cookies with raspberry jam and set star cookies on top, pressing slightly. Allow the cookies to set, then serve.
