Ingredients

600 grams Raspberries
6 egg yolks
150 grams powdered sugar
1 Lime (zest and juice)
450 grams Greek yogurt
300 grams Whipped cream
4 centiliters raspberry Brandy
2 tablespoons Raspberry syrup
For serving
12 Ramekins
12 Food-safe craft sticks
Orange juice (freshly squeezed, for serving)

Preparation steps

1.

For popsicles, rinse raspberries, mash and strain through a sieve.

Beat egg yolks and powdered sugar together until fluffy. Add the lime zest and juice, raspberry brandy, yoghurt and raspberry puree. Whip the cream until stiff and fold into the raspberry mixture.

For serving, fill the molds 1/6 full with raspberry mixture and place in the freezer for 20 minutes. Mix the raspberry syrup into the remaining mixture. Fill the ramekins with the remaining mixture. Insert the wooden stick and freeze for at least 5 hours.

To serve dip the molds briefly in hot water. Serve with orange juice.
