2 tablespoons lemon juice

Preparation steps

Wipe the raspberries to remove any dirt or debris. Rinse the cherries, drain thoroughly, and remove the stones. Mix the fruit with the sugar, and stir to combine. Cover and let infuse overnight in a cool place.

The following day, bring the mixture to a boil stirring occasionally. Mix in the lemon juice, then reduce the heat. Simmer the mixture for 20-30 minutes, stirring constantly until the jam begins to thicken.

Fill the prepared jars to the brim with the hot jam, then seal tightly and cool completely.

To test the setting point, place 1 tablespoon of the boiling jam on a small plate. Place in the refrigerator for 2-3 minutes. If the jam begins thickens and doesn't run, it has the correct consistency. Don't cook the jam any longer at this point, and fill the prepared jars with the jam. If the jam doesn't have the right consistency, cook for a few more minutes and test again.
