100 grams Beef tallow
150 grams dried Figs
150 grams raisins
50 grams chopped almonds
100 grams breadcrumbs
100 grams brown sugar
3 eggs
3 tablespoons milk
4 centiliters Whiskey
½ organic lemon (zested)
1 generous pinch cinnamon
To bake
6 small Ramekins (each around 150-160 ml) (approximately 5 ounces)
Aluminum foil
butter (for greasing)

Preparation steps

Finely chop the chilled beef tallow or process through a meat grinder. Cut the dried figs into small cubes and mix with the raisins, almonds, breadcrumbs, sugar and the tallow. Whisk the eggs, milk, whiskey, lemon zest and cinnamon together. Add to the raisin mixture and mix until combined. Grease the ramekins, fill with the batter, firmly down press and cover with foil. Place in a hot water bath on a wire rack and place in a preheated oven (150°C) (approximately 300°F) for 2 hours.

To serve, remove the puddings from the ramekins, wrap in cheesecloth and arrange on serving plates.
