For the dough
300 grams Pastry flour
2 tsps Baking powder
200 grams sugar
200 grams butter
1 tsp cinnamon
1 egg yolk
For the filling
50 grams raisins
4 egg whites
150 grams sugar
200 grams ground almonds
150 grams Dark couverture chocolate (65% cocoa)

Preparation steps

1.

For the dough: Combine flour, baking powder and sugar in a bowl. Heat butter in a saucepan. Add melted butter and cinnamon to flour. Add egg yolks and stir with a fork. Gently mix with hands and let sit 30 minutes.

Preheat the oven to 170°C (approximately 350°F). Line a baking sheet with parchment paper.

For the filling: Mince raisins. Whip egg whites to form stiff peaks and gradually add sugar. Fold in raisins and almonds.

Press dough into baking sheet and cut in half. Spread raisin mixture on half the dough. Top raising mixture with the other half of the dough. Bake for 15-20 minutes, until light brown, on a low rack.

5.

Remove from oven and let cool. Cut into bars and cool completely on a wire rack. 

6.

Chop chocolate and melt over a double boiler. Dip bars into chocolate so that 1/3 of the bar is coated. Let cool on a wire rack.
