- 7 ounces lukewarm milk
- ½ cube fresh Yeast
- ½ teaspoon sugar
- 2 ounces melted butter
- 1 teaspoon grated Lemon peel
- 18 ounces Pastry flour
- 1 teaspoon salt
- 2 ounces sugar
- 1 egg
- 7 ounces raisins
Dissolve the yeast in the milk with 1/2 teaspoon of sugar until smooth. Combine the remaining ingredients in a mixing bowl and pour in the yeast mixture. Knead with the kneading hook of an electric mixer to form a smooth dough, and until it no longer sticks to the edges of the bowl.
Cover and let rise in a warm place for about 45 minutes.
On a lightly floured surface, knead out the dough, then divide it into 16 equal portions. Shape the portions into balls and place them on a parchment paper-lined baking sheet. Cut each bun with a knife crosswise and let sit, covered, for about 15 minutes. Beat the egg yolk with the milk, brush the buns with the mixture and sprinkle with granulated sugar.
Bake in a preheated oven at 350°F for about 20 minutes, or until golden brown. Remove buns and let cool.
