1 kilogram Rack of lamb (ready to cook)
vegetable oil
2 tablespoons rosemary
3 garlic (chopped)
8 Cherry tomatoes
2 small zucchini
2 shallots

150 grams Quark
50 butter
2 egg yolks
60 grams dried tomatoes
1 tablespoon Tomato paste
70 grams breadcrumbs
1 garlic
2 egg whites

Preparation steps

For the rack of lamb, season the lamb with salt and pepper. Fry the rack of lamb in a pan in hot oil 180°C (approximately 350°F) for 10 minutes. Remove from heat, cover the pan and leave to rest. Carve the rack of lamb with sharp knife.

For the quark muffins, chop the dried tomatoes, garlic and herbs, and mix with tomato paste and the quark.

Beat the butter until fluffy, stir in the egg yolk and mix into the quark mixture. Beat the egg whites until stiff and add along with the breadcrumbs into the quark mixture. Divide the mixture equally into the greased ramekins and bake in a preheated oven at 170°C (fan: 150°C, gas mark 2) (approximately 340°F) for 10 minutes.

Heat olive oil in a pan and fry the chopped shallots, cherry tomatoes and zucchini pieces in it. Season with salt and pepper.

Serve the carved rack of lamb in plates with fried vegetables and quark muffins. Serve garnished with rosemary.
