Rabbit with Winter Vegetables
Soak clay pot and lid in water.
In the meantime, peel carrots and cut into pieces. Dice squash. Peel parsnip and cut into long strips, halving if desired.
Peel garlic. Brush rabbit pieces with oil and season with salt and pepper. Place rabbit pieces in cold clay pot with vegetables, garlic, chestnut, bay leaf and rosemary, pour in wine and 1 tablespoon oil and cover with lid. Set clay pot in cold oven and cook at 180°C (approximately 350°F) for about 1.5 hours.
Turn off oven and let clay pot sit for 15 minutes inside. Remove clay pot and serve rabbit to taste with fresh, crusty bread and a glass of white wine.
