Rabbit (without head)
40 milliliters
melted Butter
freshly ground Pepper
2 tablespoons
2 tablespoons
chopped Rosemary

fresh Arugula leaf (for garnish)

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Separate the lobes of the rabbit, remove the ribs with poultry shears from back and cut the rabbit back in 4-5 parts. Cut the haunches at the knee. Baste all rabbit pieces with the melted butter and season with salt and pepper. Arrange on a baking sheet and sprinkle with the herbs. Bake in preheated oven for about 35 minutes.

Meanwhile, peel the pears, cut in half, remove seeds and cut into wedges. Heat a grill pan and cook the pear slices on both sides until they have received a grill pattern. Arrange pieces of rabbit and pear slices on a plate and garnish with fresh arugula leaves. Serve with a Greek yogurt as a dip.
