Preparation steps

Cut rabbit meat from bone and coarsely chop. Peel shallots and chop finely. Peel and chop garlic. Rinse parsley, shake dry and finely cut leaves. Rinse thyme and strip leaves from branches. Mix rabbit meat, shallots, garlic, parsley, thyme, white wine and olive oil in bowl, cover and marinate for 12 hours, turning occasionally.

Preheat oven to 160°C (approximately 320°F.) and put hot water bath in oven. Pour contents of bowl into 4 small jars with lids and drain marinade. Cover jars with lids, place in water bath and cook for about 40 minutes. Serve with fresh baguette and green salad.
