Preparation steps

1.

Mix the saffron with 100 ml (approximately 1/2 cup) of warm water. Peel the onions and very finely chop. Rinse the cilantro and tie into a circle. Rinse the rabbit legs, pat dry and divide into 8 pieces. Heat oil in a large Dutch oven or in a tajine. Add the rabbit and sear. Add the onions and ginger and sauté until translucent. Add the cinnamon sticks, the saffron mixture, season with salt, cumin, pepper and cilantro, add broth, cover and cook for about 45 minutes. Remove the cilantro and cinnamon sticks.

2.

Meanwhile, peel and coarsely chop the potatoes. Add to the rabbit 20 minutes before the end of cooking. Add the dried fruit 10 minutes before the end of the cooking and season to taste. Serve sprinkled with blue cheese and almonds.
