Preparation steps

Rinse the rabbit, pat dry and chop into rough cubes. Peel the onion and garlic, chop finely and sauté in the butter and oil. Blanch the tomatoes in boiling salted water, rinse with cold water, peel, halve and remove the seeds.

Brown the meat on all sides in a small amount of oil, then add the onions and cook briefly. Add the tomatoes and season with salt and pepper. Rinse the parsley, shake dry and remove the leaves, then stir into the stew. Simmer, covered over low heat for about 1 hour.

Meanwhile, cook the noodles according to package instructions and drain. Distribute on plates and serve with the rabbit stew.
