Rabbit Stew with Beer and Juniper Berries
Like other types of meat, rabbit meat is rich in muscle building protein and B vitamins, which play an important role in certain metabolic processes in the body. The magnesium from rabbit strengthens the nerves and helps the muscles.
Those who prefer to do without the bacon in the rabbit recipe can simply leave it out.
Rinse rabbit, pat dry and cut into 8 pieces. Cut bacon into thirds. Rinse liver, pat dry and cut into bite-sized pieces.
Arrange rabbit pieces with bacon, liver, peeled and sliced garlic, spices and herbs in an oiled roasting pan, season with salt and pepper and mix well. Bake in preheated oven at 200°C (approximately 400°F) for 40-50 minutes. Occasionally baste meat with beer. Serve.
