2 Saddle of rabbit (each about 500 grams)
salt
freshly ground peppers
1 Tbsp Pastry flour
500 grams shallots
4 garlic cloves
4 Tbsps olive oil
¼ l Red wine
2 bay leaves
1 Cinnamon stick
3 cloves
½ tsp dried thyme
500 grams tomatoes
1 Tbsp Red wine vinegar
2 Tbsps fresh thyme (chopped)

Preparation steps

Cut rabbit into about 10 serving pieces, season with salt and pepper and sprinkle with flour.

Peel shallots. Peel garlic and cut into slices.

Heat 1 tablespoon of oil in a pan and brown meat on all sides. Remove from the pan. Saute shallots in the same pan and add garlic and saute until lightly browned. Return meat to the pan. Add half of wine, bay leaves, cinnamon stick, cloves and dried thyme. Simmer, covered, for about 1 hour. Gradually add remaining wine.

Blanch tomatoes in hot water, rinse in cold water and peel, quarter and remove seeds, cut into small pieces. After 1 hour, add to the stew and simmer for another 30 minutes. Season with vinegar, salt and pepper, Sprinkle with fresh thyme and serve.
