1 Skillet, 1 Casserole dish (or shallow dish), 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Grilling tongs, 1 Brush, 1 Grill pan, 1 Wooden skewer, 1 Fine grater, 1 Plastic wrap, 1 Plate

Preparation steps

Rinse rabbit and pat dry. Cut lengthwise into thin strips.

Thread strips of meat onto wooden skewers and place in a baking dish.

Peel garlic and chop finely. Rinse orange, wipe dry and finely zest the colored part of the peel.

Combine half of the garlic with paprika, 1 teaspoon orange zest and 3 tablespoons olive oil and thoroughly coat the rabbit skewers with the mixture. Cover with plastic wrap and allow to marinate in refrigerator for 4 hours.

Meanwhile, roast pumpkin seeds in a dry skillet until they swell. Allow to cool on a plate and chop finely.

Rinse parsley, pat dry and finely chop leaves.

Combine pumpkin seeds, parsley, pumpkin seed oil and remaining garlic and olive oil. Season with salt and pepper.

Remove rabbit skewers from marinade and drain. Season with salt.

Grill skewers in a hot grill pan for 6-7 minutes. Serve skewers with the pesto.
