Lightly dust the rabbit in seasoned flour. Heat the butter in a casserole with a little oil then colour the rabbit in batches on all sides. Remove to a plate.

Cook the onion in the butter until soft and translucent. Return the rabbit to the pan.

Pour over the stock and add the thyme. Bring to a simmer then cook for 20 minutes over a low heat.

Add the carrots and turnips and cook for a further 20 minutes. Add the peas and cook for 5 minutes.

Season. If the sauce is too liquid, remove the rabbit and vegetables and reduce to the desired consistency, then return them to the pan to heat through before serving.
