16 pieces Sage
1 tablespoon balsamic vinegar
8 ounces Game stock (or chicken stock)
1 teaspoon cornstarch
2 tablespoons Red currant jelly

Preparation steps

Trim Brussels sprouts, cut in half and cook in boiling salted water for about 10 minutes. Drain, rinse and drain again.

Cut rabbit into 16 equal pieces. Cut bacon in half, lengthwise. Place a sage leaf onto each piece of rabbit and wrap with bacon. Stick rabbit onto a skewer and add a Brussels sprout. Alternate adding rabbit and Brussels sprouts to skewers. Season skewers with vinegar, salt and pepper. Heat oil in a pan and cook skewers for about 8-10 minutes. Remove and keep warm.

Deglaze pan drippings with broth and boil. Combine cornstarch and water, then whisk into broth. Boil and stir in currant jelly and season with salt and pepper.
