2 Boneless rabbit loins (each about 80 grams or 3 oz)

2 small red onions
2 tablespoons olive oil
100 grams red Lentils
200 grams Spinach
2 garlic
250 milliliters Vegetable broth
2 tablespoons Natural yogurt (or sour cream)

Preparation steps

Rinse the lentils and drain. Rinse and trim the spinach. Peel the garlic cloves.

Heat the olive oil and sauté the lentils and the crushed garlic over medium heat briefly. Pour in the broth and bring to a boil. Reduce the heat, cover and cook the lentils for about 10 minutes. Season with salt and pepper. Add the spinach and cook for another 2 minutes.

Rinse the rabbit fillets, pat dry, cut into quarters and season with salt and pepper. Peel the onions and cut into six strips. Thread the meat onto skewers alternating with onion slices.

Heat the oil in a pan over medium heat and brown the rabbit skewers on all sides for about 4-5 minutes.

Serve the lentils alongside the rabbit skewers, garnished with yogurt or sour cream. Serve with a fresh baguette.
