2 kilograms Quince
1 organic lemon (juiced and zested)
200 milliliters white wine
1 kilogram jam sugar

Preparation steps

Rinse the quince and wipe thoroughly with a clean kitchen towel. Remove the stem and flower. Peel the quince and finely dice.

Place the quince in a saucepan, and cover with 1 1/2 liters (approximately 1 1/2 quarts) of water. Add the lemon juice and the zest, and bring to a boil. Cook for 45 minutes until soft.

Line a large colander with cheesecloth, and set over a bowl or pot. Pour the quince mixture through the colander, Squeeze the juice from the quince. Cool and measure the quince juice, then mix with an equal amount of sugar and the white wine. Stir until combined, then bring the mixture to a boil in a large pot over high heat. Cook for 4 minutes, stirring constantly.

Remove the pan from the heat. Fill the prepared jars to the brim with the jam. Seal tightly and turn upside down for 10 minutes to cool. Turn right side up and cool completely.
