Quark with Berries and Meringue
- For the quark
- 400 grams Quark
- 4 tablespoons powdered sugar
- 1 tablespoon Vanilla sugar
- 150 milliliters Whipped cream
Preheat the oven to 100°C (approximately 225°F) convection.
Beat the egg whites with the lemon juice until stiff and gradually add the powdered sugar. Whip until stiff and spoon into a piping bag fitted with a star tip. Pipe the meringues onto a parchment paper-lined baking pan and bake about 40 minutes in the preheated oven, until the meringues are crisp but still shiny. Remove and let cool.
Mix he quark with the powdered sugar and vanilla sugar until creamy. Beat the cream until stiff and fold in.
Rinse, trim and chop the strawberries. Mix with the powdered sugar and the orange juice.
Spread the quark mixture into bowls, top with the meringues and serve garnished with strawberries.
