Apples (about 500 grams)

For the lemon curd

Preparation steps

1.

Peel, quarter and remove cores from the apples. In a saucepan, using a little water, cook the apples until they are soft. Allow to cool slightly. Add honey and puree.

Mix the quark, honey, lemon juice and whipping cream. Stir until smooth.

Dry roast the flaxseed in a pan until the seeds start to jump. Immediately sprinkle the brittle and cinnamon in the pan, until it begins to melt. Remove the pan from the heat, stir in a teaspoon of butter. Allow to cool. Fill four tall glasses with the applesauce. Add the lemon curd on top. Refrigerate. Serve with the flaxseed brittle crumble.
