- 500 Quark
- 11 ozs Yogurt (low-fat)
- 3 Tbsps mineral water (carbonated)
- 1 Vanilla bean
- 2 ozs Dark chocolate
- 2 Tbsps (liquid) honey
- 9 ozs Strawberries
- ½ Lime
- 1 Tbsp Maple syrup

Preparation steps

Mix together the quark and yogurt until smooth. Stir in the mineral water.

Halve the vanilla bean lengthwise. Scrape out the seeds with a knife and stir into the quark mixture.

Shave some of the chocolate into small curls for garnish. Coarsely chop the rest and stir into the quark mixture along with the honey.

Rinse and hull the strawberries and carefully pat dry, then cut into pieces. Place in a tall vessel.

Squeeze juice from the lime half and add to strawberries. Puree with an immersion blender. Stir in the maple syrup.

Layer the quark stracciatella and strawberry puree in glasses, top with chocolate shavings and serve.
