3 egg yolks
30 grams powdered sugar

1 centiliter Rum

200 grams Quark
40 grams Whipped cream
3 egg whites
2 tablespoons sugar

Preparation steps

In a metal bowl set over a pan of barely simmering water, beat egg yolks with powdered sugar until fluffy.

Stir in a pinch of salt, vanilla bean seeds (scraped out of split vanilla bean), cornstarch, rum, cream and quark. Whisk until combined.

Beat egg whites and sugar until stiff, then carefully fold into quark mixture. Coat ramekins with butter and sprinkle with sugar. Pour in quark mixture, stopping about 1 cm (approximately 1/2 inch) before the rim of the ramekins. Place ramekins in a baking dish and pour in hot water. Bake in a preheated oven at 220°C (approximately 425°F), 25-30 minutes. Remove from oven, dust with powdered sugar and serve immediately.
