400 grams Quark
100 grams softened butter
40 grams sugar
3 egg yolks
150 grams raisins
1 tablespoon Pastry flour
1 tablespoon lemon juice
grated Orange peel (2 teaspoons)
grated Lemon peel (2 teaspoons)
1 tablespoon kirsch
40 grams Marzipan
2 tablespoons breadcrumbs
For the sauce
500 grams Cherries (from a jar)
150 grams sugar
½ stalk cinnamon
250 milliliters Gewürztraminer

Preparation steps

1.

Beat butter and sugar until fluffy, add orange and lemon zest.

2.

In a second bowl, combine quark, egg yolks, crumbled marzipan and cherry liqueur, mix until uniform. Add to butter mixture.

Coat raisins in flour and add together with breadcrumbs into quark mixture.

4.

Butter four small soufflé ramekins and fill with quark mixture.

5.

Place ramekins in a pan and pour hot water up to half of ramekins' height. Bake in preheated oven at 180°C (approximately 350°F) for 40 minutes.

Set aside some cherries for garnishing. Combine the rest of cherries with sugar, cinnamon and Gewürztraminer. Bring to a boil and simmer, covered, for about 10 - 15 minutes. Strain through a sieve. 

7.

Let souffle stand in the oven for about 10 minutes with an open door. Invert souffle onto warmed plates and serve with cherry sauce and cherries.
