2 egg yolks
40 grams powdered sugar
80 grams Quark
3 egg whites
30 grams sugar
1 whole Lime (grated)

150 milliliters Red wine
50 grams sugar
500 grams mixed Berry
1 packet Vanilla sugar
2 Cinnamon stick

Preparation steps

For the compote, bring the wine, sugar, vanilla sugar and 450 ml (approximately 1 3/4 cups) of water to a boil, remove from the heat and transfer to a bowl.

Rinse and trim the berries.

Add the berries to the syrup and let stand briefly to marinate.

Meanwhile, for the souffles, beat the egg yolks with the powdered sugar until foamy. Slowly add the squeezed quark. Beat the egg whites until stiff, sprinkle in the sugar, and beat until the mixture is white and glossy. Fold with the lime zest into the quark mixture. Grease ramekins (about 8 cm) (approximately 1/2 inch) with butter, sprinkle with sugar and pour in the mixture. Bake in an oven preheated to 190°C (approximately 375°F) about 25 minutes in a water bath. Place the ramekins on plates and serve the souffles dusted with powdered sugar with the compote.
