100 grams Quark
2 packages Vanilla sugar
1 tablespoon cornstarch
1 large Papaya

Preparation steps

Fill an oven broiler pan with water about 2 cm high up the sides and place on the bottom rack of an oven preheated to 180°C (approximately 350°F).

Butter 6 soufflé dishes and sprinkle with 1 tablespoon sugar. Separate the eggs. Beat the egg whites until stiff, gradually adding half of the sugar and beat until stiff peaks form. Beat the egg yolks with lime zest and the remaining sugar until pale and fluffy. Stir in the quark, fold in the egg whites and pour into the ramekins. Place in the water bath and bake in the oven for about 20 minutes, do not open the oven while baking (fan not suitable).

Meanwhile, peel and core the papaya. Puree 2/3 of the pulp with some sugar. Cut the rest into thin slices. Remove the souffles from the oven, sprinkle with powdered sugar and immediately serve with papaya slices and puree on plates.
