Quark Schmarren (Baked Pancake)
Soak the raisins for about 1 hour in rum, then drain. Mix the quark with the egg yolks, cream, sugar, and flour to make a smooth dough. Fold in the raisins. Beat the egg whites with an electric mixer until stiff and fold very loosely into the quark mixture.
Grease a baking dish with butter and heat for about 20 minutes at 200°C (approximately 375°F) in a preheated oven. Pour in the quark mixture, spread evenly in the dish and bake in the oven for about 30 minutes, until golden brown. Tear the cake roughly into bite-sized pieces and serve dusted with powdered sugar.
