Quark Plum Gratin
Combine milk with a pinch of salt and bring to a boil. Add Amaranth and simmer on low heat, stirring occasionally, for about 40 minutes. Cool until lukewarm.
Rinse, halve and pit plums. Separate eggs. Beat egg whites with a pinch of salt until stiff.
Butter small baking dish and sprinkle with flour. Spread half of plums in the baking dish.
Whisk egg yolks with vanilla sugar and sugar until fluffy. Add quark and cooled Amaranth mixture. Fold in egg whites. Spread half of batter into the baking dish, cover with remaining plums and top with remaining batter. Sprinkle with flaked almonds. Bake in preheated oven at 200°C (approximately 400°F) for 30-40 minutes or until golden brown. Serve.
