Nutritional values

Plinsen, or also called Blinsen, Plinz or Flinz, originate from Central Germany and are small pancakes. If curd is added to the dough, the cakes are called "Quarkplinsen". This also provides plenty of satiating protein. Thanks to spelt flour and yeast, the dough is full of B vitamins that are good for the brain and nerves.

Especially with its intense spicy aroma, stewed cherries are not only tasty when the stone fruit is ripe, but also in autumn and winter. Then simply take frozen sour cherries and sweeten with liquid honey if necessary.

1 Kitchen twine, 1 Pot (with lid), 1 Cherry pitter, 1 Teaspoon, 1 Small bowl, 1 Wooden spoon, 2 Small pots, 1 Bowl, 1 Hand mixer, 1 Non-stick pan, 1 Tablespoon, 1 Slotted spatula, 1 Whisk, 1 Tea strainer, 1 Tea filter bag, 1 Cutting board, 1 Aluminum foil

Preparation steps

Coarsely crush the cardamom pods and star anise and place in a tea filter bag. Tie with kitchen twine.

Place spice bag and cherry juice in a pot, bring to a boil, remove from heat and set aside.

Rinse cherries, drain well and pit with a cherry pitter.

Add cherries to the juice, bring to a boil again, cover and cook over low heat until cherries are softened but still al dente, 3-4 minutes. Remove the spice bag.

Mix cornstarch with 2 tablespoons of cold water and stir into the hot cherries. Return to a boil, then remove pot from heat and add 2 teaspoons of sugar. Allow compote to cool.

Heat milk in a pot until lukewarm and remove from heat. Stir the yeast and remaining sugar into the mixture. Then stir in the flour, quark and egg, cover and let rest for about 30 minutes.

Heat 1 teaspoon each oil and butter in a non-stick pan over medium heat. Pour in enough batter for 5-6 pancakes, using 1 tablespoon of batter for each pancake. 


Cook pancakes until golden brown, about 2 minutes per side. Place finished pancakes on a plate and cover with aluminum foil to keep warm. Repeat with remaining oil, butter and batter. Dust pancakes with powdered sugar and serve with cherry compote.
