For the mousse
800 grams Quark
200 grams butter
200 grams sweet Whipped cream
200 grams sour Whipped cream
4 egg yolks
160 grams sugar
1 packet Vanilla sugar
80 grams raisins
½ untreated lemon (zest)
25 grams chopped, toasted almonds
40 grams Candied lemon
40 grams candied orange
To garnish
12 halved Strawberries
2 Tbsps chopped Shelled pistachio

Preparation steps


For the mousse: Pour quark into a cheesecloth, tie and hang a few hours over a pot, so that the whey drains off. The quark should be as dry as possible. Stir butter until creamy and fold in quark. Warm cream in a saucepan, remove from heat and let cool. Whip egg yolks with sugar and vanilla sugar until fluffy and mix in cream.


Beat mixture in a bowl set over (not in) a pot of hot water (not boiling) until creamy. Then place over a pot of cold water and allow to cool. Mix with butter-quark mixture. Rinse lemon in hot water, wipe dry and finely grate zest. Add lemon zest, chopped almonds, candied lemon, candied orange and raisins into mixture. Line 6 small pots with holes with cheesecloth.


Fill pots with mixture and press firmly. Cover with a plate and a weight. Set approximately 12 hours in a cool place. Turn over molds onto plates before serving and remove cheesecloth. Serve garnished with fabric flowers, fresh strawberries and chopped pistachios.
