250 milliliters Coconut cream (well chilled)

Preparation steps

Rinse the lime hot and pat dry. Remove the zest of one lime in thin strips. Finely grate the zest of the second lime and juice both limes. In a saucepan, bring the lime strips, lime juice, coconut water and sugar to a boil. Reduce to a simmer and cook until the sugar is completely dissolved, about 5 minutes. Set aside 4 tablespoons of the lime peel and coconut syrup for garnish. Add the grated lime zest to the remaining syrup and set aside. Add the yogurt and quark and stir until smooth. Beat in the coconut cream until creamy. Spoon into glasses or bowls and refrigerate until well chilled, at least one hour.
