- For the strawberry compote
- 1 ¼ cups
Strawberries (halved or quartered)
- 1 tablespoon
- 2 tablespoons
- 3 tablespoons
- For the filling

Preparation steps
1.
To make the compote, mix together the strawberries, sugar, 2 tbsp lemon juice and the apple juice and bring to the boil. Remove from the heat and leave to cool.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Mix together the flour and a little milk. Add the egg, a pinch of salt, the browned butter and the remaining milk and stir well. Leave the batter to rest for at least 20 min and the then re-stir.

Heat some butter in a pan and fry ladles of the batter on a medium heat. Flip the pancake and lightly fry the other side, then transfer to a plate to cool. Continue like this until you have five thin pancakes.
5.
Mix together the quark, egg yolk, vanilla extract, lemon zest and a little lemon juice. Place a spoonful of the filling in the middle of each pancake and tie together like a little sack using kitchen twine.
6.
Place the pancake sacks in a baking dish and bake for around 20 min. Remove from the oven and arrange on plate. Dust with icing sugar and serve with the cold strawberry compote.
