In addition to their natural fruit sweetness, strawberries provide plenty of folic acid, which is important for the cells, and vitamin C. The low-fat curd cheese provides muscle-strengthening protein, the wholemeal products provide satiating fibre and the rapeseed oil provides healthy fat. Thus, the curd cheese dumplings, as the dish is also called, are a good mix of nutrients.

The curd dumplings or also called curd cheese dumplings originating from Austria differ from the German curd balls in that they are cooked instead of fried, this saves fat and makes them lighter. For a change, the dumplings can also be prepared with apricot or plum compote. Simply boil the diced fruit with 150 ml apple juice and 100 ml water until soft. 1 teaspoon butter
1 teaspoon Canola oil
2 tablespoons breadcrumbs (about 20 grams)

Preparation steps

Beat quark and eggs in a bowl until smooth. Gradually add the flour, semolina and 1 pinch of salt. Let soak briefly.

Meanwhile, rinse lemon with hot water, pat dry and finely grate the peel.

Rinse strawberries, chop coarsely and place in a tall vessel. Puree strawberries, grated lemon peel, honey and a pinch of cinnamon with an immersion blender.

Fill a large shallow pan with plenty of water and 1 teaspoon of salt and bring to a boil. Use a tablespoon to make small dumplings from the quark dough (if the mixture feels too loose, add a little semolina).

Gently slide dumplings into the boiling water and reduce heat immediately. Allow dumplings to simmer over low heat until they float to the surface, about 8 minutes.

Meanwhile, heat butter and oil in a skillet. Toast bread crumbs until they turn golden brown.

Gently remove the dumplings from liquid using a slotted spoon, drain and toss in the skillet to coat with breadcrumbs. Serve with strawberry sauce.
