Quark Dumplings with Poppy Butter
Drain the quark on a wire and let stand for 1 hour. Beat the butter with sugar, vanilla sugar, salt and egg with a whisk until foamy. Stir in the cheese, lemon zest, semolina and breadcrumbs, and allow to stand for 30 minutes.
Boil salted water in a large pot. Make small dumplings from the quark mixture using two wet tablespoons. Drop the dumplings into boiling water.
Reduce the heat and let the dumplings simmer for about 12 minutes in the open pot. Lift out the dumplings with a slotted spoon and drain.
Mix the orange juice with butter and poppy seeds in a pan and bring to a boil. Pour the poppy butter over the quark dumplings and serve.
