Preparation steps

Mix quark with crème fraîche and horseradish. Rinse and halve cucumber lengthwise, remove seeds and coarsely grate. Rinse, trim and cut radishes into matchsticks. Mix half of cucumber and radishes into quark mixture and season with salt, lemon juice and pepper.

Divide quark and vegetable mixture among bowls, smooth tops and serve garnished with the remaining vegetables and cress.
