125 grams softened butter
1 pinch salt
5 eggs
250 milliliters acid Whipped cream
1 cup raisins
200 grams sugar
1 lemon (zested)
1 cup blanched and chopped almonds
1 Tbsp finely chopped Candied lemon
1 Tbsp finely chopped candied orange

Preparation steps

Pour the quark in a cloth, tie securely and suspend over a bowl for a few hours to allow the whey to drain off. The quark should be as dry as possible. In a pot, beat butter until fluffy and add the salt, the eggs, sour cream and quark.

Heat the mixture, stirring constantly, but do not boil. As soon as the quark mixture begins to bubble, remove the quark mixture from the heat and allow to cool while stirring. Toss the raisins with the sugar, the lemon zest, the chopped almonds, and the candied lemon and orange peels.

Line 6 small flower pots with cheesecloth. Fill with the quark mixture and press firmly. Cover with a plate and a weight. Refrigerate for 12 hours to cool. Invert the flower pots onto plates before serving, remove the cheesecloth and decorate with candied fruit.
