Preparation steps

For the dough: Measure flour into a mixing bowl, mix yeast in thoroughly. Add sugar, vanilla sugar, salt, egg, milk and butter. Initially knead ingredients on lowest setting with an electric hand mixer, then at the highest level for about 5 minutes into a smooth dough. Cover and let rise in a warm place until volume has doubled.

For the quark filling: Combine milk, custard powder and sugar and cook according to package instructions. Pour custard into a bowl and allow to cool.

Remove dough from the bowl. On a lightly floured surface, knead briefly again, roll out thinly and line a greased deep baking sheet with it and push to the edges slightly. Stir quark and raisins into the cooled custard, beat egg whites until stiff and fold in. Spread quark filling on the dough.

For the custard: Beat egg whites in a bowl until stiff. In another bowl whisk butter with an electric mixer until smooth. Gradually add sugar into the butter. Stir as long as needed until a bonded mixture has formed. Gradually stir in yolks. Add egg whites to the egg yolk mixture. Sift in cornstarch and fold both carefully together. Spread custard on the quark filling, smooth it and slide baking sheet into the preheated oven.

Bake at 180°C (convection: 160°C, gas mark 2-3) (approximately 350°F) for approx 30-40 minutes. Remove from oven, let cool, cut into pieces and serve with coffee, as desired.
