300 grams Quark (20% fat)
3 tablespoons powdered sugar
1 teaspoon Bourbon vanilla
250 grams Whipped cream
250 grams Raspberries
50 grams Blueberries

Preparation steps

1.

Whip cream until stiff. Pick over raspberries and blueberries, then puree until smooth and strain through a sieve. Mix together quark, vanilla and powdered sugar. Fold in cream. Set 1/4 of mixture aside.

2.

Mix remaining quark with fruit puree. Fill 4 glasses with 2/3 of the berry-cream. Divide reserved plain cream among glasses and top with the remaining berry-cream. Serve garnished with fresh berries, if desired.
